Tiramisu
Tiramisu of chocolate cake and apricot, strawberry or mixed berries confiture
Ingredients
- 6 eggs separated
- 1 cup of sugar
- 2 teaspoons vanilla extract
- 250 grams (box) mascarpone cheese
- 250 grams of white cheese for baking
- 150 grams of chopped nuts (walnuts, pecans, hazelnuts)
- 1/2 cup of cocoa
- 2 chocolate cakes
- 1/2 cup of espresso
- 3 tablespoons of brandy
- 1 and a half cups of apricot or strawberry or mixed berries confiture
Preparation
- Whip the egg whites for a few minutes, while whipping add half of the amount of sugar until a stable foam is obtained
- Transfer the foam from the mixer bowl to another bowl
- In the mixing bowl, put the egg yolks, vanilla and the rest of the sugar and beat for 3-4 minutes
- Add the cheese to the yolk mixture and mix by hand with a whisk until a uniform mixture is obtained
- Into the this mixture “fold” in the egg white foam
- Slice each cake into 3 long slices and dip them in the coffee/brandy mixture
Assembly
- Line a square dish with the chocolate cake layers, pour an even layer of apricot or strawberry or mixed berries confiture on them
- Spread a thick layer of mascarpone cream on top of the jam and sprinkle chopped nuts
- Put another layer of chocolate cake on top and repeat all the steps again, finishing with a handful of chopped nuts
Serving
- Refrigerate for 3 hours before serving, slice into squares and serve on a beautiful serving plate
