Pancakes with mascarpone cream and mixed berries confiture

Ingredients

For mascarpone cream

  • 500 g of mascarpone cheese
  • 3 tablespoons of sugar powder
  • 1 tablespoon vanilla extract
  • A teaspoon of lemon zest.
  • 4 scrambled eggs
  • 1/4 cup sugar
  • A teaspoon of lemon peel
  • 20 grams of melted butter

For pancakes

  • 2 cups of self-raising flour
  • A glass and a half of milk
  • Melted butter for frying

Mixed berries confiture

Preparation

Making the pancakes

  • Beat all the ingredients except the butter for frying in a mixer until a uniform batter is obtained
  • Grease a non-stick frying pan with butter and heat on a medium flame
  • Using a ladle, pour the batter into the pan, and fry for about two minutes or until small bubbles appear, then turn to the other side and fry
  • Remove from the pan and keep in a warm place until the rest of the pancakes are fried

Making the mascarpone cream

  • Mix well with a hand whisk or fork all the ingredients of the cream and keep in the refrigerator until serving

Serving

  • Place pancake on a nice serving plate
  • Put the mascarpone cream is on the pancake or next to it, and a spoonful of Mixed berries confiture on top
