Tiramisu
Pancakes with mascarpone cream and mixed berries confiture
Ingredients
For mascarpone cream
- 500 g of mascarpone cheese
- 3 tablespoons of sugar powder
- 1 tablespoon vanilla extract
- A teaspoon of lemon zest.
- 4 scrambled eggs
- 1/4 cup sugar
- A teaspoon of lemon peel
- 20 grams of melted butter
For pancakes
- 2 cups of self-raising flour
- A glass and a half of milk
- Melted butter for frying
Mixed berries confiture
Preparation
Making the pancakes
- Beat all the ingredients except the butter for frying in a mixer until a uniform batter is obtained
- Grease a non-stick frying pan with butter and heat on a medium flame
- Using a ladle, pour the batter into the pan, and fry for about two minutes or until small bubbles appear, then turn to the other side and fry
- Remove from the pan and keep in a warm place until the rest of the pancakes are fried
Making the mascarpone cream
- Mix well with a hand whisk or fork all the ingredients of the cream and keep in the refrigerator until serving
Serving
- Place pancake on a nice serving plate
- Put the mascarpone cream is on the pancake or next to it, and a spoonful of Mixed berries confiture on top
